Today was Sunday so I did some food prep for the week. I got a bunch of groceries at the store: potatoes, butternut squash, apples, veggies, non-dairy milks, juice (for housemate), oranges, frozen fruit, herbs, rice, etc. During the week, I stop at the store on my bus ride home, so don't want to carry too much heavy stuff then.
Then I made a double batch of Jeff Novick (JN) basic burgers. I divided the mixture into two, and added different spices to them. I seasoned one half with (if I remember correctly) thyme, basil, oregano, and onion powder. The other was sausage seasoning! JN gives a recipe for this in his burgers DVD. It's sage, thyme, savory, garlic powder, black pepper, and fennel seeds. I think JN's burger method is sheer genius. They are easy to make, are healthy and low-fat and high nutrition, taste good (maybe a little bland if you don't add enough seasonings), and the genius is in the variety: regular, mexican, curry, falafel, italian (meatballs), southwest, kasha, and breakfast patties. It's the breakfast patties I'm after with the sausage seasoning. I'm going to eat them with my hash browns--starting tomorrow morning! I made smaller versions for the morning "sausage".
Then we had a cookout.
Then during the rather painful Packer game, I harvested basil and kale from the garden. Every month or so, I cut down most of the basil plant, pick off the leaves and freeze them. That's about how often I mow down the kale too. I don't know how much kale I harvested, several lbs. After stripping the leaves, I stuffed half of it into a large ziplock bag to freeze. The other half I cooked up in two large pressure cookers with onion and mushrooms. After cooking and cooling I put them in bowls to freeze--easy to take out for a daily portion of greens. Next weekend I'll harvest the collard greens.
Housemate is the tomato harvester. She has canned 92 pints in the last month! One reason I haven't eaten too many tomato dishes lately is that I'm saving them for later in the Fall after the fresh tomatoes are gone. We eat lots of fresh tomatoes on salads and burgers and just on their own sliced. It will be a treat when they are gone to start eating tomato-based cooked dishes using the cans.
This morning I made a batch of soy yogurt. That will be ready in about an hour. That is super easy to do, takes a few minutes in the morning to prep, and a few minutes 12 hours later to turn off the heater, put on the lids and store them in the fridge.
Finally, I cooked up some rice, and soaked beans to cook tomorrow morning. I make these in fairly small batches because I prefer to make them every 3 days or so, and not have them sitting around longer than that.

weekend cooking
It's fall and my food choices are changing with the season. It's winter squash time! Here's what I'm planning to try this week:
And that's just for lunch and dinner. I'm thinking sweet potatoes for breakfast. I made a huge pot of soup using veggies from the garden mostly. This has white lima beans, purple barley, onion, eggplant, collard greens, leeks, mushrooms, 2 cans of garden tomatoes, broccoli, and italian spices. I froze it into several containers to eat during the week. I still have some containers from my last batch of soup so I can have some variation. Here's my plan for the week--don't know if I will like it, I'll know tomorrow--brekky will be sweet potato topped with bean soup--I'm usually hungry after exercise class. Here's an example from today's lunch:
Here's one of my most favorite treats. I ate this yesterday while making house mate's smoothies. It's just frozen mango, frozen blueberries, and a little d'angou pear vinegar (optional). I love this. It's easy to make thoroughly enjoyable food out of simple ingredients.

This also has banana, fresh ginger and cilantro. It tasted quite good.
Lunch and dinner will be salad (cabbage, spinach, lettuce, broccoli, cauliflower, seed mixture, vinegar) topped with squash, soup, apple, and pomegranate seeds, and probably some fresh ginger. The squash I'm hoping will be easy to prepare, just baking in the oven. I'll microwave it to heat it up. I have no idea what this will taste like, but I expect it will be pretty good. I mean, almost any mixture of veggies and fruit and greens tastes good.
Here's a quickie large salad I made tonight: cabbage, spinach, romaine, broccoli, then some pomegranate seeds, seed mixture, and fruit-infused vinegar.

weekend cooking
I started a new job on campus (doing the same thing as before, just not working from home anymore); and I'm gone from 7 am until 9 pm every weekday. yikes! (Don't worry, that includes fun in addition to work). So I'm trying to work out my food prep. I think it involves a lot of weekend cooking. Here's what I tried out this weekend.
First I had a snack because I was hungry after yoga:

These are some of my favorite foods: frozen mangos, romaine lettuce, carrots, and sugar snap peas.
Then I made housemate's smoothies. Here's a gigantic bowl of fruit, mostly frozen, with a bunch of fresh grapes. I kinda went overboard on the fruit but that's okay, it just turned into 13 smoothies instead of 10. We have a visitor coming this week so I made extra.

Next I assembled yummy beans in carrot juice. I tried out my new juicer. Housemate was irritated with me for getting a new juicer since I already had a good one. But I sure like this one. It's easy to use, smaller than the old one, and easy to clean up. Here's the juicer in action:

Then I couldn't resist playing some more so I tried out an apple. First slice (using an apple corer/slicer):
Then juice. Here's the juice from one apple. The apples are local, fresh, and yummy:

This is just a treat. Whole apples are healthier because they have all the fiber.
Okay, that was Saturday. Sunday morning I put the beans on to cook and went to church. Sunday afternoon, the weather was too nice, so I went biking. Then Sunday night it was time to make the veggies. The garden is overflowing with collards so that was the main ingredient, but it also included kale, swiss chard, eggplant, lots of herbs, onion, and garlic. Here's some of the produce left, after most was processed in the food processor:

I seriously used a ton of collards, so the only way to fit them in was to chop them tiny with the food processor. I just chopped everything with the food processor, because it was fast and it compressed the food more. This was a ton of veggies! At left is my big pot and at right is housemate's---she has much fewer veggies, and some potatoes added in. Oh, and this was before all the greens were added to my pot:

While these were cooking I made tomorrow's salads. I forgot to take a picture: romaine lettuce, yummy fresh strawberries, raspberries, blackberries and kiwi, and a few pumpkin seeds. I'll add D'angou pear vinegar when I'm ready to eat them.
Now time to assemble the veggies: the cooked greens&veggies, the cooked beans, some canned tomatoes (from the garden), and just a bit of date syrup (leftover from the smoothies):

Put them in the freezer (joining the smoothies):

Here's tomorrow's food in the fridge:

oh yeah, that's housemate's spritzer in the back. Ignore that. For brekky and lunch I'll have salad, cooked greens, and my favorite raw veggies: carrots, sugar snap peas, and kohlrabi. For dinner, sweet corn & mashed avocado and salad. I'll have something similar every day. The salads and raw veggies I'll prepare every night for the next day, and the cooked stuff will come out of the freezer. We'll see how this works.

this weekend's cooking
As you can see by my recent posts, I had some fun in the kitchen this weekend even though I didn't spend too much time in there as it was a good outside weekend. I don't want to spend much time in the kitchen this week as I have lots of work to do, and I wouldn't mind playing too, though work will probably win out, unfortunately.
So I made a big pot of bean "soup" to take care of my cooking needs for the week. I will still be making lunch for Marilyn (house mate) and Kenny (work collaborator), but I'll still save time by not doing additional cooking for myself. I plan to make micro-salads in the morning divided into 3 portions for brekky, lunch and dinner. That plus beans at lunch and dinner, plus whatever fruit I want to add should take care of me. I made a yummy fruit salad today. I'm addicted to the cheap strawberries we're getting right now.
I also made salsa and guacamole for Marilyn, and a nice easy veggie soup made with potatoes, canned tomatoes, peas, corn, onion, herbs, and ground sunflower seeds. This cooked up real quick in the pressure cooker. The soup is not as nutritious as Dr. Fuhrman likes (because of the potatoes) so I think I won't post it here. I think I can remember for next time.
